Oh I have also been there with the burning jalapeño hands!! I bought a box of gloves for my kids science dissecting and have the rest in my pantry for times of cutting peppers ect

You should not share waterbathing carrots. Lots of newbies who are just learning need to learn the right way. Pressure canning only for canned carrots.
