This reminds me of whenever my Nana uses leftover mashed potatoes to make those delicious potato cakes. Of course because we are southern she does fry them in oil but of course they are just as yummy without it too. I really love dicing jalapeños really fine and adding them to the cake with some plant based cheese if im not feeling in the mood for dairy. I eat more of vegetarian diet.
