    another good tip about the instant pot you may or may not be aware of Dan. it was designed with a lid holder. the ridges sticking out from the sides of the lid can be placed into the handle of the main pot. this also lets any moisture drain off the lid into the small plastic water pot on the back of the instant pot

    I always save turkey & chicken carcasses for congee. I freeze them if not cooking right away. I do chop my ginger fine as I love the taste of ginger. Also add green onions & shitakis. Delicious. You might have to get an 8 at to hold your turkey. 😊
