Some tips I'd give would be actually making a cheese sauce with a roux, forming a bechmel, then mixing in cheese at a lower temp to not make it curdle. Also, your chili is far too thin. Reduce it further, and you'll get a more complex and robust flavor profile from it. The cheese sauce works well with the chili to make it nice and creamy. Chili mac is chili mixed with mac and cheese. This is not that. Pasta and shredded cheese isn't mac and cheese. Furthermore I'd highly recommend slicing/shredding your own cheese because pre-shred often is coated with powder to prevent clumping which results in less unity and clumping in the cheese sauce for the mac.
