This Mexican Quinoa one pot meal is not only high in protein, easy to make, & delish…it offers super easy clean up!

Recipe 👇🏻
1 onion chopped, 3 garlic cloves chopped, 1 can of diced tomatoes, 1 cup peppers, 1 cup corn, 1 can black beans (rinsed), 1 tbsp cumin, 1 tbsp chili powder, 4 cups veggie broth, salt and pepper to taste.
Pressure cooker: Add everything to a pressure cooker and set on high for 10 minutes. Manually release and top with avocado if desired.
Stove top: saute veggies in a little veggie broth, add the rest of the ingredients and bring to a boil. Reduce heat and simmer for 20 mins.
