    4 Delicious Recipes to Go

    •Potato Salad with Red Cabbage

    6 small potatoes

    ½ cup water

    100 ml Olive oil,

    2 tablespoons whole grain mustard

    1 teaspoon salt

    1 teaspoon sweet cayenne pepper

    1 teaspoon red flake paper

    1 teaspoon black pepper

    6 sprigs of spring onions, chopped

    1/3 medium red cabbage, sliced

    • Cut potatoes in big chunks. If you have a pressure cooker place them in with cold water and a pinch of salt. Close the lid and let them boil for 10 minutes until fork tender (If you don’t have a pressure cooker you can use a regular pot.).

    • While potatoes are cooking, prepare greens. Start with spring onions, the white part should be chopped thinner, the green parts could be thicker.

    If you’ll eat this salad on the same day you prepared rub red cabbage with some salt, but if you’ll eat it for more than one or two days you can skip rubbing step.

    • For dressing, in a large bowl, mix olive oil, mustard, salt black pepper, cayenne pepper and red pepper flakes.

    • When the potatoes are done, take the first heat off and then mix them with the sauce while they are still hot so potatoes can soak the sauce better.

    • Add the purple cabbage and the greens. Give it one last mix and it’s ready to serve. It is delicious by itself, but you can enjoy it as a side dish with schnitzel or köfte etc..

    •Fava

    Dried broad beans; 500 gr

    Onions; 2 small, cut in half lengthways

    Olive oil 1/3 cups-80 ml

    Salt; 1-heaped teaspoon

    Sugar; 1 teaspoon

    Drinking water; 1.4 litres

    To garnish

    Dill; 4 sprigs, finely chopped

    Crispy onion- if you have at home

    Fresh olive oil

    • Place broad beans, onions, salt and water in the pressure cooker.

    • Close the lid and cook until the pressure gets high for 10 minutes. If you don’t have a pressure cooker, the water you pour in the pot should be 3 fingers above the beans. You’ll need to cook them for about 30-35 minutes until they soften.

    • Then add olive oil and sugar. Use a hand blender to make it silky smooth.

    • Get a big tray or anything that you want your fava to take the shape of, put some olive oil and pour the mixture.

    • First, allow it to cool at room temperature. Once cool, refrigerate for at least 2-3 hours. Now it’s ready to turn!

    • Put some olive oil, crunchy onions and dill on top and serve.

    •Kısır with Pomegranate

    Fine bulghur, 2 cups

    Pomegranate juice, 2 teaspoons

    Pepper puree, 1 tablespoon

    Tomato puree, 1 tablespoon

    Olive oil , 10 tablespoons

    1 tablespoon pomegranate molasses/sour

    Black pepper, 1 teaspoon

    Salt, 2 teaspoons

    Cumin, 1 teaspoon

    Spring onions, 8 springs chopped

    Fresh mint, ½ bunch chopped

    Parsley, 1 bunch chopped

    Pomegranate seeds, 3 handfuls

    • Put fine bulgur, warm water and salt in a bowl, close a lid until the bulgur grows bigger.

    • Pour pomegranate water into bulghur.

    • In another bowl mix tomato paste, pepper paste, olive oil, pomegranate molasses, salt, black pepper and cumin.

    • Put the sauce into the bulghur and knead.

    • Add chopped greens, pomegranate seeds into the sauced bulghur and mix them very well.

    Serving tip: You can wrap the kısır with lettuce leaves or you can carve the pomegranate and use it as a plate.

    •Kuru Köfte, Dry Meatballs

    For meatballs;

    Ground beef, 500 g

    Onion, 1 grated

    Garlic, 2 cloves grated

    Cumin, 1 heaping teaspoon

    Black pepper, 1 teaspoon

    1 egg

    Meatball spice mixture, 2 teaspoons, https://etsy.me/3yzrdjC

    Bread, 3 slices or 3 tablespoons breadcrumbs

    Salt, 1 teaspoon

    Parsley, ½ bunch

    For sauce;

    Yoghurt, 8 tablespoons

    Tahini, 3 tablespoons

    Lemon juice, 4-5 drops

    Black pepper

    Salt

    • Put onion and garlic cloves into the ground beef and knead so well.

    • Take out a half of the bread, put it in a food processor, add some water and run it until it crumbles, then add it to the ground meat.

    • Add cumin, meatball spice mixture, black pepper, egg and salt to the ground beef and knead more.

    • Finely chop parsley. After the spices you add on the minced meat are mixed well, you can add the parsley into it.

    • After thoroughly kneading, fry the meatballs that you have formed into long finger shapes by putting sunflower oil in a wide and deep pan.

    • For sauce, mix all ingredients in a bowl.

    I have to pause the video at fava to tell you this: if I can make something to substitute for avocado, I will be SO happy! I love avocados but they are quite expensive here and when I do treat myself and buy one, it often turns out to be bad and must be thrown away. So THANK YOU for the hope that fava will be a substitute!! Now back to your video 🙂
