After a year of trying keto recipes I just do what's simple for me and my family. I rotate beef, chicken, fish. Veg sides, raw and cooked. Hubs wants rice or potatoes. No seed oils. Supplement fat with sour cream, olive oil, butter. Simple and fast keeps it successful.

Strange and wonderful side effect of staying keto for over 2.5 years. My husband and I hardly ever have keto treats like when we first converted. In the beginning, it was about finding recipes to make approved treats. Keto cheesecake, keto mug cake, keto mug bread, fat bombs etc. Now, we might make something once a month, because we are so happy just eating food that powers us. It isn’t about “entertainment” any longer. I love to cook and bake, but keto cooking is fast and easy. I used to feel guilty that I could make a nice meat and veg in 20 minutes or less. Now, I just enjoy the time reading, or whatever else. Keto gives us great health, lots of energy, and free time to do whatever we want. Thanks for continuing to share great content!

The pizza thing. For me, pizza is a vehicle for mozzarella cheese. This is why a fathead pizza works for me. I don't need no stinking crust. 🙂

PS: I've eaten JUST mozzarella on many occasions, out of the microwave. It's better if some of it has been made into a crust (basically fathead pizza, with the help of a couple ingredients) though.

I like also using cabbage leaves for burgers for a change from lettuce leaves, and they are more sturdy so my burger doesn't make a big mess. I still don't like avocado or cauliflower, but I include them where I can. If I eat cauliflower I mix it with broccoli, and I eat more olives than avocado. Unfortunately, avocado will actually make me nauseous so I don't tend to try it very often. Most of my meals are meat and veggies I'm not a cook and I don't like messing with recipes so the easier the meal the better.

A all meat pizza using pork rinds, that's one thing I've never fixed and I like rinds. Did you ever try the red hot rinds to make a shell? I'm scared of trying new things because I've ruined so many foods I've attempted to make. Tried some tortilla shells again and these fell apart so I'm not sure what I did wrong. WTG Dr. Violet!

In restaurants I find sticking to grilled meats with a side salad is the easiest way to stay in a safe zone. No sauces in restaurants also helps a lot to stick to plan.

I quietly switched out hubby's veg oil for coconut avocado and bacon grease, coated his fried meats in parmesan and nutritional yeast, and replaced his sweetener with monk fruit…he's lost 30 pounds and doesn't know why…
