    Ooooh I might make that edamame recipe today since i have the ingredients. The other two recipes look good too. Unfortunately enoki mushrooms are hard to find where I live.

    I was just recently able to try enoki mushrooms and i loved them I can't usually handle the texture of cooked mushrooms but with that tofu and the enoki I'm sure I can handle some shitake and that edamame looks so good 🤤

    All look delicious!!! Edamame is something we always order in an izakaya, with some tamago yaki or dashi tamago yaki, because my daughter just loves those dishes. I was worried with here being 3 years old taking her to an izakaya, but they had yakitori also and gyutan which she loved (my wallet not so much hahahah). She also loves the age dashi tofu but never had it with any toppings. It's an idea to coat the mushrooms with some potato starch, deepfry those and pour over a dashi for age dashi kinoko. Also delicious and a fun twist on a traditional izakaya dish. And also fun is coat a piece of tamago yaki with panko and deep fry for tamago yaki katsu. I think it would go great with your mushroom sauce you use on the tofu. Or for a vegetarian katsu kare rice.

    I'll try your dressing idea when I have shio koji again. Need to find some koji rice since i used up my stock.

    Hope you didn't have much problems with the typhone that passed over Japan recently. You were at your mother if I remenber correctly.
