My husband's work does 4x 10hr work days a week. Fridays are optional overtime.
I make a crockpot meal very similar to this and it freezes raw really well..thaw the night before and out it in the crockpot in the morning

That looks really good. My favorite crockpot meal is,
Beef roast
potatoes
carrot coins
onion
1 pkg of AusJus mix
1 container of low sodium beef broth
1 can of crushed stewed tomatoes
Cook on high for 5-6 hrs
Take out roast beef and shred, if you want to have a thicker juice make a cornstarch or flour slurry to juice and stir. Then return roast beef to crockpot, mix and eat. So good!

The dinner sounds delicious. But, you lost me at the green beans. I'd be leaving them off. Long story short. Growing up all my extremely picky brother would eat was green & yellow beans and peas. And I told my mom when I turned 18. No more beans for me!!! And I haven't had one since. And I'm now 55.
