So….after all that, is the rice covered or uncovered once the ice cubes are put on the rice? I'm assuming not. Just like you don't cover the wet paper towel.

This all depends on the density of your freezers ability to. Ice out of my small refrigerator/freezer melts thoroughly while reheating my rise. Yet the ice cubes out of my larger freezer don't melt.
PS. Make sure you are using great quality water to make your ice. If you use tap water or store bought water it can leave a weird taste after reheating.

Just wet a paper towel and use to cover your rice as you microwave… or just get a rice cooker/warmer like every other Asian person… though we finish our rice daily.
