    I wasn't sure how to recommend someone for you to interview, so I'll do it here. Have you contacted either Chef Jana (I think she's Brazilian,) or Yeung Man Cooking he's Canadian)? They both have YouTube channels. I enjoy their recipes, but I don't know anything about them.
