is the reason Skyr has more protein is because it is drained more than Greek yogurt? You know where I'm going with this, can we just drain Greek yogurt to increase the protein content since we'd be replacing the whey eaten with a more solid (protein packed) yogurt? I don't know if the bacterial strains in Skyr are different but that shouldn't alter the protein content.

I’ve been making yogurt for many years. Starting this year I’ve been consistently making l.reuteri fermented dairy and I really love it for dessert with a scoop of the Perfect Keto Beauty + Sleep or a handful of berries. I am going to try making skyr as it is similar to what I’ve been doing. I always use Inulin with the starter culture. It works well.

I make the L-reuterie fermented dairy with Fairlife! So good! I’ve also used Lifeway Kefir as the starter with the inulin and Fairlife, but I ferment for the 36 hours.

I love fermented foods to I've only dabbled into it but I would love to get more into it. The homemade Mayo I make it fermented and it lasts a month instead of a short time
