    I fill at half a tank, that's just my thing for years. Just bugs me to be below. Great idea to have a day if your driving is pretty regular schedule.

    The way you meal prep (setting out ingredients but not fully cooking each meal) is unique. I think this is less intimidating than a traditional do-it-all-on-the-weekend meal prep. 😀 I can see this being a huge timesaver and wish I had dinner prepped that way for tonight!

    About coconut milk, someone in the WFPB world (can’t remember who), suggested using the equivalent amount of soy milk with a touch of good quality coconut flavoring. I have done that a few times and it’s actually pretty good.

    Good tip on freezing hummus in quantity. I have never tried that!
