Hi, where we live we mostly eat pickled beets, I have an easy recipe (not sure of the source as it was passed down to me, so I apologize for not being able to give credit to the source), but I promise it is to die for. Cook whole beets (about 10 large beets) until soft (not too soft, but so that you can stick a sharp knife into it), remove from the pot and let cool (just to be able to handle them, not until completely cold), rub off the skins (this makes a huge mess, but is relatively easy). Slice the beets into slices or, if small, you can leave them whole. Next start your brine, for this bring the following to a boil: 1 cup sugar, 2 cups vinegar, 3 cups of water. Make sure you bring the brine to a boil. Once its boiling, add your beets to the brine (just to heat them up again). Now, fill your sterilized jars with the beets and fill up with the brine. Close the jars quickly and real tight and wait for the popping sound of your lids to make sure its properly sealed. You have to try it, its so good.

Had to laugh when you said the beets when cooked taste like dirt. My oldest son doesn't like beets, he said if I want to eat dirt I'll just go to the garden and eat dirt.🤣

Carrots that take in an abundant amount of water when they are growing will crack open. It's called turgor pressure, I believe. You just do your thing without a bunch of pretense which makes you so relatable to watch. Appreciate your videos, keep up the great work.

I'm jealous it looked like you put it in a French roll one of my all time favorite styles but alas I can't reach my head anymore to fix my hair that way and I really miss it. My daughter lives in Vancouver, WA and I live in Happy Valley, Oregon. Traffic in Portland and around is AWFUL and you can never judge when it will be light traffic. :O

Becky, a short cut to that farm in Helvetia is through St. John's and over either Germantown Rd or Cornelius Pass Rd. It's definitely more scenic and at least you won't have to deal with Portland traffic. Mid morning is best. I used this route as my commute before I moved to Vancouver because I detest Portland's traffic.

Have you dehydrated cucumbers ? If so, how can they be dehydrated? I am trying to do it but no success so far.
