    I would love to try this. I'm taking meds for high blood pressure so I'm not sure about the sodium content. Disappointed that I might not be able to enjoy those pickled green beans, but I can enjoy them by steaming them just enough so they still have some crunch. Thanks or sharing.

    Wow, so easy! I have a ceramic pickling vat, I'd bet it would work well for this type of pickling. Cool dark place is the hard part – the coolest part of our kitchen approaches 80 at this time of year even with the a/c blasting.

    TY Nili! Great idea to make green beans with potatoes cooked in a tomato sauce That's a Greek dish called fasolakia me patates se saltsa ntomates.. My mom used to make that a lot when I was growing up in NYC Stay safe!
