Gina, this is not Chicago's traditional deep dish pizza…too many steps missed, ingredients not included from the crust to the 'must have' inside spices and ingredients for authentic, Chicago style deep dish pizza. It's Gina's style…and that's okay…you did put your twist on it! Glad you enjoyed 'Gina's style,' deep dish pizza. We Chicagoans are mad serious about our authentic, deep dish pizza. I missed the live. But I'm watching it now. My question for you would be when it comes to the dough rising , I've heard that people cover the dough with a towel of some kind like a damp dish towel or damp paper towel. Do you suggest something like that or no towel at all?
