    Made this today, It was great but…. I had to add 3 extra cups of broth because there wasn't enough juice and it started to burn after 20 min. I know my carrots were large & I onlyy used 1/2 c barley but really 3 extra cups of liquid?? would certainly make it again though it was so good.

I already know, because I'm Sicilian I'll be topping this with grated Pecorino Romano cheese – because we put it in our coffee 😊 I knew recovering alcoholics who wouldn't eat anything made with alcohol. So, and my mom did this because there were a lot of us kids, I'm using tomato juice. This is when I ask my older sisters, "Does yours taste like mommys' ?" Because different brands of tomato juice have distinctly different flavors. My choice is Sacramento Tomato Juice. You make it look so easy, it's a pleasure 💯

    If you cook something with wine or other alcohol for an hour you will still have 35% of the alcohol left. If you cook it for 2.5 hours it will have 5% left. That alcohol cooks off quickly is a cooking myth not based on any science.
