I always add tamarind or green mango when currying fish. I add tamarind to curry goat as well to help reduce the gaminess.
Love this I made a curry fish using similar ingredients – ginger, coconut.milk and tomatoes which is not traditional Trini curry but I loved it. Will definitely try the sauce method so I can reach for of any time…I'm we can get a few weeks in the freezer right?! Well done as usual
