    Hey Chris. Just made this curry and it is on point. I learned how to make curry chicken from your video years ago and was equally impressed by this updated version. I stuck with adding the tomato ketchup you added in that vid, since I feel it genuinely adds depth to curry. Especially true if the curry is subpar. Great and flavorful recipe. Also I had no potatoes on hand so I used some carrots and the curry carrots were delish 😋.

    I watched my mother, Aunts and Grandmothers. Wash their meats. So naturally now that I am own my own. I wash my meats. I have seen them used lime, lemon and vinegar. Not only that. We and I still have a cupboard full of different types of spices and seasonings. They make their own seasonings. I know people Cooks differently. But I would never understand why some people only uses salt and black pepper as season. Some just salt. Some people puts it at the end. When they are about to take the food out. To me, that’s like eating air. The lickle bit of salt you used didn’t even get chance to soak in. I am very picky when it comes to where I eat and who I eat from . I often don’t eat buffet bring a dish at gatherings. Resturant I am picky too. lol

    I had learned to make curry chicken many years ago from my Guyanese friends. and even though I had made it several times and although each time this I made it has turned out great, In my opinion this one has been the my best one. I believe the green seasoning makes a big difference. Thank you so much Chris for this wonderful tip

    Love that you take all the fat out. That doesn’t at flavor it just fat. My mom’s family do it so does my mom. I do it too. You are a professional cutting that chicken boy. I wish i could do it as fast as you.

    I get tired of folks telling us Island folks to not wash our meats! Just like you asked, how many times have they heard of us getting Salmonella? I can't even think of a time! But folks just throw their chicken right in the pot…..👀 Anyway, I love, love chicken curry! ❤️
