Curried Potatoes from Instant Pot

This recipe was inspired from Healthy Eating for Life for Women by PCRM. I tweaked it to be oil-free and pressure cooked in the electric pressure cooker.

    I’ll be cooking that soon in my IP. My favorite brown rice is Lundberg short grain. I never measure, just dump a bunch in the IP, cover with water. I set the Pot to 1 minute on high, then let the pressure come down naturally. It is perfect every time. Have now used it for the Lundberg sg, black Forbidden rice and wild rice. They are all perfect! And can anything be easier than that? I love my IP🎉🎊💕

    I'm going veggie. I like your recipes and I'm now subscribed. I was veggie (vegetarian) before and love Indian food. I think the garbanzo beans would be better and tortilla or flatbread on the side. What happened to the tofu cucumber dip?

    Love Magiverin! Always glad to hear how others have varied to suit what is in the kitchen. That is high mark in the great chef category in my world! 

    I wanted to share that I got my Instant Pot on Tuesday afternoon. I cooked pinto beans as my first attempt in it. It was late in the day to be making beans cause I had been out all day. I got home to find the pot had arrived and I decided to make them. We were eating refried pinto beans with avocado, my corn salsa, chopped romaine in corn tortillas 45 minutes later. Of course canned beans would have had it ready sooner. Then I made farro for a salad and then sweet potatoes and steamed greens in the new Pot. Thank you for helping me finally decide to make this purchase.

    My mommy still has my pot. 🙁 However, I ordered a new one – the bluetooth one – but it won't be here until April. 🙁 That is a long wait time, but apparently it's on back order. I will refer back to this recipe when it arrives. The good news is that I should be able to program the recipes using the Instant Pot app!  I cannot wait! 🙂

    These were so delicious! I put the leftovers in taco shells. Blending the sauce with the immersion blender is a great idea! I made it in the Vitamix, quite a bit was wasted- and you don't want to waste any of that!

    Oooo why do I make this in my normal pot? Going all IP next time geeze. I make mine pretty much the same except I sub your peas for spinach. Never added beans or chickpeas so I'm going to try that. Yummy! Thanks for the ideas!
