    I made this today in my birthday iPot!! It is delicious but I over cooked the cauliflower. I set if for 4 minutes but got busy with my daughter and forgot to do the quick release. I did increase the spices a bit and added some cayenne and kale at the end. SO SO good even though the cauliflower dissolved. Thank you for the recipes! I have my IP because of you!

    Amazing!! I did it on pressure for 5mins and used more spices. It wasn't dry, it had a spicy soup, which I loved. Thank you so much for all your works. I have a IP solely because of you. I wanted to use your link but because I live in Ireland I couldn't. I'm a single guy who is not a good cook when it comes to meat but since I turning veggie a few years back I found myself at a loss for being inspired and cretive, the IP complete changed that, simple to do meals but with wide variety of different ingredients i.e not pasta sauce AGAIN:) Keep up the great work, it makes a real difference! Plus you're vids are really cool and entertaining, more power to you!

    Do you have to cook the rice seperately? Is it not possible to cook the rice and the curry together? Because what I would love to is coming home and having the meal ready to eat. But it looks like I would still have to eigher cook the rice oder the curry when I'm coming home from work.

    A little hint on how to arrange the disposition of basmati rice and the vegies in the plate, You could eiher put the rice first,  make a hole in the middle  and then put the vegies (it is elegant, but requiresa large plate, like a pizza plate), or simply put the rice on one half of the plate, and the vegies on the other one..Simple and elegant ;o)

    I cook a whole head cauliflower, do Not cut it cook it whole.
    1 head cauliflower (around 2-2.5 pounds)
    1 cup white wine
    1 tablespoon butter
    1 tablespoon olive oil
    Juice of ½ lemon
    1 or 2 teaspoons red pepper flakes
    Salt to taste
    about 10 minutes at High Pressure this was on a regular pressure cooker, on different cooker adjust time accordingly

    this can be served with a cheese sauce over the top

    Add peas to give it color and some sweetness too. If they are frozen you can add them after you take off the lid at the end, stir them in and then just set the lid back on top for a minute or two.  I would def. do this on high pressure for a few minutes instead of slow cooking. Why cook slow when you can cook FAST!

    Aloo Gobi! That's the name of the cauliflower potato dish that inspired this Indian recipe. When I make it I just use a regular frying pan because cauliflower is delicate and easy to overcook, plus it doesn't take long to make at all to require a pressure cooker. Use the instant pot for the rice instead, perhaps add peas to the rice or even saffron to make it more interesting. Also, a great way to get that authentic spice flavor is to use whole cumin seed and sauté it in the pan with a little oil. When done, top it with some garam masala. I love pressure cookers for Indian dishes, but better for lentil or even eggplant based curries.
