    Paleyasadam – back in the day when there were no refrigerators and the south Indian sun would be so hot, it was common practice to store leftover rice in water. This way, the rice didn't dry up either. Not to mention all the benefits of costuming leftover rice.

    The recipe is very simple.

    Ingredients
    1 cup leftover rice, soaked in water
    1 tsp oil
    1 tsp mustard seeds
    1 tsp urad Dal
    1 green chili, finely chopped
    1 red onion, finely chopped
    Coconut yogurt, as required
    Salt to taste

    1. Drain the rice and set aside.
    2. Heat a pan, add oil, mustard seeds, urad Dal and green chilies. Fry until golden. Add the onions and salt and cook until the onions are soft.
    3. Add this to the rice. Add coconut yogurt and mix. Sprinkle coriander leaves and enjoy.
