    I'm thinking ahead for tomorrow's supper, I'm thinking of something I can simmer all day and go about some chores. With my pork chunks in the freezer I was kinda stumped. Angelica to the rescue! Don't have tomatoes or jalapeño but I do have Rotel tomato diced in a can with green Chiles in it, I'll use half a can. Thank you you for sharing. Your husband must get excited when he sees you working with the crockpot, excited for what's about to be served.

    Seems like you have enough liquid you would not need to add any water at all. Also perhaps roasting all the aromatics before you add them to the crock pot. Put them under the broiler for 10 minutes.
