    I am going back in time to watch more of your videos. I just finished eating a bowl of your Ethiopian Lentil and Butternut Squash Stew. I liked that in this Creole Rice and Greens you spice it up in each bowl as desired. That is the norm here too. I wanted to say that I used dried seaweed as a salt substitute in the Ethiopian Stew. Hubby has high blood pressure which is what got him finally to switch to a Plant-based diet like me. His Doctor says no salt but like your daughter he is used to a lot of salt. I am wheening him slowly and not adding any salt when cooking but using subs to give it a sufficient flavor for me. Then when he adds his own salt at least it is not adding to what I already would have put in. I like the sound of this recipe. I will let you know when I make it.

    Try Tony Chachere's Creole Seasoning.  It's probably available at your local market, but Amazon has it.  It's the real deal.  I've been a fan for years.  Most Cajun dishes I make (red beans, Cajun chili, Cajun succotash), just add enough to make it salty enough, and it's got a good Creole flavor.  I like it so much I just bought a gallon of it on Amazon in the giant food service size.  Proably not smart to buy that much of any spice for home cooking but I didn't want to risk running out when the SHTF.  🙂
