2oz Baby Bella or your favorite mushrooms, chopped
16oz Alfredo Sauce ( I used Bertolli d`Italia)
1 TBSP olive oil
1 tbsp minced garlic
1 tsp Redmond real organic season salt
1 tsp onion granules or powder
1 tsp Italian seasoning
Pepper to taste
3 slices, cubed high protein bread that has been dried out( use cookie sheet and dry the pieces of bread out in the oven while it is pre-heating. Watch them closely so that they do not overcook)
2oz Mozzarella- Hold for topping
1/3 cup Pork Rind Panko (I used Pork Barrel Pork Rind Panko) also hold for topping
Add in the cooked drained cauliflower, garlic, and seasonings stir to incorporate
In a large mixing bowl add in the chopped chicken, alfredo sauce, cubed dried bread and the cauliflower, mushroom mixture from the skillet the ingredients and stir to combine
In a small, sprayed or nonstick casserole dish put the combined ingredients into the dish
Top with all of the mozzarella then top that with the pork rind panko
Put into the pre-heated 350 Degree oven and cook for 30 minutes or until bubbling and the top is browned and the cheese is melted
Remove from oven and allow to rest and cool for 5 to 8 minutes before serving
Macros per serving: 467 calories/ 13g Total Carbs/ 29g Fat/35g Protein
I love it but My husband hates cauliflower. So I am going to make this recipe with broccoli. I do plan to make a small casserole with cauliflower for me. It looks delicious.

Wendy that looks so fantastic. If you're afraid your cheese will burn and you want pork panko also you could layer some cheese in the middle, but it looked so good just the way it was. I know you don't have a lot of counter space, but have you thought of using a countertop oven, like a June Oven or larger Toaster Oven, so you don't heat your house up?

Once in a while I'll by bulk chicken to freeze and no matter how I cook it the texture is strange. Well what to do with it? Your recipe is the perfect solution. Iβm going to make this and sub my leftover broccoli rice. Looks like a meal prep meal. Also Iβll cook it in my air fryer. I made this with simply cooked chicken (in the air fryer), some leftover riced broccoli, and it was amazing. Hubby loved it too. He asked what was in it. I told him. I also used 3 kinds of cheese (mozzarella, Asiago and a bit of goat cheese,) It smelled so god as it was baking (btw in the air fryer 325 degrees for 20 minutes.) put the mixture into a small ceramic (made for oven and air fryer) casserole dish that fit my 7 quart air fryer. Thanks for such an easy and delicious casserole idea.

Creamy Chicken Cauliflower Casserole
Makes 4 Servings
Pre-heat oven to 350 Degrees F
Ingredients:
12oz cooked chicken, chopped
12oz cooked cauliflower florets
2oz Baby Bella or your favorite mushrooms, chopped
