    I usually add carrots and celery, along with the potatoes (because carrots and celery are always in the fridge bin)…this is such a simple soup, but so good for dinner on a busy night….

    I made this soup tonight and my wife and I give it a 5 stars rating. Yum! and so easy!.

    WE left the skins on the potatoes, added the carrots and 1 celery stalk diced. topped with smoked paprika.

    JILL …I love, love, love, this potato soup recipe. I have altered it a bit. After the potatoes are pressure cooked, I add schell wheat Noodles, Broccoli, Carrots, Celery, Cabbage, Cauliflower. Then I put the I-pot on slow cook for an hour to let everything meld together. I make so much of it, I freeze single servings for me to eat at a later date.. since it's only me here to eat. It's so good Jill.

It's all new to me and I'm loving it! Today I made your potato soup. I thought I had miso but found out my daughter cleaned the fridge and threw it away.๐Ÿ˜ณ i just added another cup of vegetable broth and it came out awesome. Your the best.

    Miso is one of those few plant-based fermented foods that us vegans need to get into our diets on a regular basis. Unfortunately, if you dump it in the Instant Pot before cooking the food, you've cooked it and killed all the healthy bacteria and turned it into nothing more than a salty and soy-y seasoning.

    You gave me a great Idea with this video.
    Last night I made mashed potatoes by cutting them and boiling them in the BTB No-Chicken stock. I drained them and only added some salt, a pinch of garlic powder (optional) and unsweetened almond milk (NO Butter of any kind!).
    They came out GREAT!
    You didn't even miss the butter!
    This is so much healthier then adding all the fat that (even Vegan) butter has!
