    I tried to calculate the ingredients in this recipe so it can be just 1 pound of macaroni, but some things like the seasonings don't make sense to divide, can this recipe work for 1 pound of macaroni?

    Is the roux really necessary? Doesn't it dilute the cheese flavor? The cheese is already creamy. I'm going to try this recipe without the roux. I'm going for a cheesy overload. Thoughts?

    Really appreciate your channel and enjoyed the sodium citrate technique! Do you have any similar technique for like a seafood chowder to keep the cream from separating after frozen?

    Very, very late to the party. Can I substitute sodium citrate with vinegar or maybe a bit of lemon ? They are also kind of emulsifier agents, and what about taking it from freezer to oven/microwave ? is it possible ? I would imagine that I would have to eliminate the panko step in order to do this on microwave. Anyway, I am starting a frozen food business here in Brazil (not your competitor haha) and wanted to bring different staple recipes from around the world, and my choice for an American recipe is mac n cheese with shredded beef ribs, been investigating for a couple of weeks and found your video. You guys are awesome and very experienced, It is a pleasure watching your explanation, thank you very much .
