I tried to calculate the ingredients in this recipe so it can be just 1 pound of macaroni, but some things like the seasonings don't make sense to divide, can this recipe work for 1 pound of macaroni?
Will this recipe work without a roux? Will the sodium citrate act as a thickener?
Is the roux really necessary? Doesn't it dilute the cheese flavor? The cheese is already creamy. I'm going to try this recipe without the roux. I'm going for a cheesy overload. Thoughts?

Very, very late to the party. Can I substitute sodium citrate with vinegar or maybe a bit of lemon ? They are also kind of emulsifier agents, and what about taking it from freezer to oven/microwave ? is it possible ? I would imagine that I would have to eliminate the panko step in order to do this on microwave. Anyway, I am starting a frozen food business here in Brazil (not your competitor haha) and wanted to bring different staple recipes from around the world, and my choice for an American recipe is mac n cheese with shredded beef ribs, been investigating for a couple of weeks and found your video.
