    Pro tip 1:
    Use shallots instead and make sure to VERY THINLY dice them up. (Search a video of marco pierre white on how to do that)

    The shallots will MELT and release their flavor much better

    Pro tip 2:
    Mushrooms absorb A TON OF MOISTURE. Use that as an opportunity to fill them with TASTEY fond, deglazed with chicken stock.
    This will make the mushrooms hydrophilic and they won't absorb oils, making them 100% ready for sauteing and PACKING A PUNCH of MELTED SHALLOTS AND CHICKEN FOND FLAVOR

    Awesome creamy chicken breasts, but poured over acidic rocket salad? I get you want to balance the richness of the sauce with an acidic vinaigrette but rocket is best served fresh and on the side, not ruined with heat.

    Looks so delicious! Perfect for keto dieters. I will give this one a try for dinner. And I love to try the salad dressing. I will use my keto lakanto mayple syrup instead of the one that your are using so that there is no sugar. All looks yummy… thank you!
    UPDATE: I added white wine vinegar in this recipe and use keto lakanto maple (no sugar). My husband said it's 11/10 Stars! He said he felt like he's eating in a classy restaurant with a delicious expensive dinner.

    Is that right about the salt and mushrooms? I add salt to draw the water out, then carry on cooking until the water evaporates and brown? Is that not the way to do it?

    I have been teaching myself to cook via youtube video's and I find that you don't take it for granted that we all know the basics. I have seen some cooks add salt to mushrooms immediately. I have seen some cook the minced garlic for much longer. Thank you so much for all your little bits of added information. And this recipe in particular, OH YEAH!!!
