    There seems to be some conflict about Swede and Turnip. The swede is a hybrid from the 17th. Century ,between a sort of cabbage and a turnip, from Sweden. A turnip is a turnip and always has been.

    If you do get to go into a Cornish tin mine remember (this aint coal), if you bang your head on the granite sides your least worry is a headache and a helmet is essential and the sides are irregular. It is well worth the effort and the Cornish Mine Experience is well worth a visit. Hope you get to do it one day, Chef John. England & Cornwall would welcome you!

    Great pasties John you need to get over to the UK and head to st Ives I go there for my holidays and they make the best pasties in the world as a ex baker my self I would say that your pasties look amazing ….

    The last time I made pasties I added a splash of worcestershire (Lee and Perrins) and a dusting of Coleman's mustard powder – that really took it up a notch. I also used "rough puff", but I'll use this crust recipe next time. As always – thank you Chef John

    I have a serious question (I'm sitting down to type this, because that doesn't happen very often) but I thought, for a true Cornish Pasty you'd need to put swede in it. Swede is rutabaga not turnip. Is that not right?!?! I remember watching an Englishman make these and they used a very round, purplish/white vegetable that he called a swede. HELP!

    John, The people of Cornwall are not considered "cornwallians", but rather they are Cornish. Thus the name of the pasty. Don't know if your comment was a joke, but here are my two cents.

    G'day Boss, Just a thought: Add a good helping of Thyme and Garlic, and a carrot, ( even parsnip)) to the ingredients. I also added a spoonful of gravy mix. After the egg wash on top, add sesame seeds, or coarse salt,
