Yep…mayo with lemon pepper seasoning on fish is delicious. You can top it off with toasted panko crumbs when you bake the fish.
The bread crumb thickening is actually the historical method for thickening, pre roux in European cooking. Honestly with the "secrets chefs don't want you to know" complete BS I have never met a chef that is not thrilled to talk at length about recipes, techniques or tips they have found in their years in the kitchen.
