    The bread crumb thickening is actually the historical method for thickening, pre roux in European cooking. Honestly with the "secrets chefs don't want you to know" complete BS I have never met a chef that is not thrilled to talk at length about recipes, techniques or tips they have found in their years in the kitchen.
