You showed one of my favorite magazines, Southern Living. Excellent publication. I taught my daughter when she was little that while cooking, read the recipe, get all the ingredients out and set on kitchen island. As you progress through the recipe steps and add each measured ingredient, set that item over on the kitchen counter to remind yourself you've added it and you won't get confused and make a mistake. Especially important while baking as in cookies, which she loved to bake like your son.

When baking I always say under cooked is better than over cooked. When you take your cookies out and let them sit on the hot cookie sheet they do continue to cook more. I have found cooking one pan of cookies in the middle of your oven does better than cooking both sheets together. Plus never leave the kitchen when cooking cookies if so set your timer for 1-2 minute less. Hope this may be useful.,

I enjoy your channel very much. The unsettled feeling after coffee sounds like it could be a reaction to more caffeine than you are use to. Try a decaf or 1/2 decaf next time and see if it helps. This worked for me.
