    At my old job, I ended up changing job positions to rotisserie cook. I had to prep the chickens and cook them. My favorite part was seasoning them. Girl, I loved adding paprika to get that dark crispy skin. Yummmmmmm

    If you dont like to snip and clean the green beans you can buy haricot vers. They are french green beans that can precut and cleaned. Aldi usually sells them in the fresh produce section 😉

    I'm just blown away with this, in the best way possible!!! I get your raw chicken discomfort and I also super-clean my sinks. But if you can handle kids and their messes, you are one step ahead!!! I have never used smoked turkey for green beans, I always used ham. But I'm going to try this!!! Just like the sour cream, I always used whole cream and one of my cheeses is a sharp one. I loved seeing this and I most especially love the spirit of sharing that you have for who you are preparing it for. ❤❤❤ You are right in what you said about being Christian and I also know that this last year and and a half has made many people not act like it. I live rural and all but 2 of neighbors are now seniors. I take my senior neighbor's recycling stuff for them and I pick up whatever they need from the pharmacy and the grocery store. We do gather safely at certain times to BBQ, when we are all going through our freezer inventory, but maybe we can be doing something more or better for our neighbors. Thank you for a reminder to do better!!! P.S. My across the street neighbor (who grows a surplus), just asked if there's anything special that she can can do with corn or corn on the cob. Her fields are still producing… Edited for my neighbor's question.

    FYI tip: You shouldn’t throw away the backbone you cut off. It makes excellent stock and your mom could use it along with the gizzards to make gravy. There’s a lot of flavor that comes from the flesh and bones of that. Oh and btw: to get a darker gravy, if you keep your roux on the fire longer (about medium low temperature) and keep stirring, the color will gradually darken. You have to nurse it and don’t walk away from it or it will scorch. It’s wonderful what you are doing for your neighbors.

    When you spatchcock or butterfly a whole chicken you remove the backbone which is what you did. Next time pierce the chest plate with your knife to cracked it, then flip it and push down to flatten it more. Also Jia there is no need to wash a whole chicken. Especially with lemon.

    I love Stove Top Kisses!!! I cook whole chickens often. I don't take out the spine before hand but I use it later to make chicken stock (you can use the raw one to do the same).
    I haven't tried greens or green beans in my instant pot yet, but I want to, along with chicken stock.

    I learned to break down cuts of meat to cut down on costs when there are whole chickens on sale in my area. A lot of people don't know where to cut the bird to break them down, so the stores always have roasters left over. The spine part and bones makes WONDERFUL chicken stock. Just chuck everything in a pot with some clean water and spices and simmer away for a few hours. Better quality than most store options and nutritious. Happy cooking!

    I love the way you cleaned that chicken. I’ve never cleaned your chicken with lemon. I use kosher salt. But I’m going to try the lemon. Your videos are always entertaining.
