LOL Your husband is so adorable and such a hard worker in the kitchen! I want to try a couple of these but without the cilantro. I don't personally care for the taste. And maybe leave out some of the spicy peppers in the first salad. The beets and carrots looked amazing all by themselves! Thanks for sharing. The dinner table must look amazing with all those colorful dishes assembled! xoxo

I'm interested if there's difference when you cut the carrots before boiling or after boiling? Cutting them before would shorten cooking time. Thanks!

YUMMM. Can't wait to make these. Thanks to you and Mr. Firefly for sharing! Quick question, if you don't mind: For those of us trying SO HARD to reduce sugars, do you think any major flavor components would be lost if we did not put the sugar in the cooking water? Would greatly appreciate any guidance in that area. Thanks! Best, jill

Mr Firefly has great knife skills! The spices in your salads make me think of a salsa I made this weekend with black beans, spicy tomatoes, corn with bell peppers, cumin, garlic and fresh cilantro.
