    Here in UK coconut ice was the first thing taught in school cookery classes. In fact the whole time I lived in Western Australia I never once came across it there !

    This reminds me of the commercial candy made by Brach's called Neapolitans. Couldn't you make one third pink, keep one third white, and knead in a bit of cocoa powder to make one third brown? Then layer them in a pan. I think I will try this.

    In Jamaica it's called grater cake because we use the grater to shave the coconut down and we do not use tin milk…. This recipe looks very much good toošŸ‘Œ

    I have had this since I was about 8 years old and I make it now for the holidays but it is not unknown to us in America. I do red and green for Christmas and yellow and pink 4 Easter.

    I wish I had this recipe when my mother was still with us. In her last days I was on a consistent hunt for all things coconut šŸŒ“. Yup mom loved coconut, my daughter on the other hand would treat this like poison.
