Here in UK coconut ice was the first thing taught in school cookery classes. In fact the whole time I lived in Western Australia I never once came across it there !

This reminds me of the commercial candy made by Brach's called Neapolitans. Couldn't you make one third pink, keep one third white, and knead in a bit of cocoa powder to make one third brown? Then layer them in a pan. I think I will try this.
You need to keep half of it white only and put one layer over the other to get a pink and white coconut ice sweet…..in Mumbai India this is made during Christmas….

I have had this since I was about 8 years old and I make it now for the holidays but it is not unknown to us in America. I do red and green for Christmas and yellow and pink 4 Easter.
