I just made this and it was such an incredibly flavorful, delicious dish. I did make one modification: hazelnuts are very expensive and I couldn’t afford them. Do I used slivered almonds in their place. I’m not vegan but I appreciate the simplicity and excellence of this wonderful dish. It’s my meal prep for this week at work. I think next time I will add some diced tomatoes to this. It felt a little dry with all the spices and I think the tomatoes would bring some welcome moisture and acidity.. I also added ginger and walnuts since I didn't have hazelnuts around. I might also suggest substituting in Chinese Five Spice powder in place of the chili powder…a little more "Asian".

Yum! One question; do you use coconut BEVERAGE or the non-processed milk that comes in a can that has lumps? It looks smooth like the beverage in the video, but it seems to me the recipe should call for the un-processed milk.
I have to try it I've never tried coconut rice before, I've been vegan for a couple of months and that looks so good.
