Looks truly and tremendously righteous! I'd think that cooking meat like that to the right falling-apart point would be an hours-long job, but I guess the pressure cooker dramatically cuts the time? Makes sense. One question: did you ever think of putting onion and bay leaf in with everything else to flavor that meat? Seems like they'd be logical and welcome ingredients. Just wondering.
