Hi everyone, here’s another popular Sichuan dish, Eggplant with Garlic Sauce. Often time when you order this dish from restaurants, eggplant is deep fried.

    I made the your kung pao chicken tonight for dinner. It was delicious! My whole family loved it! I also added celery and cucumber in addition. I am looking forward to trying this recipe as I love eggplant!

    I am unfamiliar with two ingredients. How long do black vinegar and spicy bean paste last after opening? I assume you store them both in the fridge? Thanks!!!

    Eight years after posting of recipe and now in time of pandemic. I made this dish and it was GREAT. I never made any eggplant dish before! It is now on my regular go-to recipes. I am going to explore your website for more recipes. thanks.

    Does the Chinese Eggplant have a lot of seeds? I simply love your simple way of cooking everything looks delicious I made the chow mien with the Napa cabbage and chicken it was really good

    Looks very nice 👍 I like the steaming of the eggplant . I’m a bit lazy .. is it okay just to use the dried minced garlic ?
    Also I’m a little confused…is dark vinegar Balsamic vinegar or is it malt vinegar? In Australia here we call scallions , spring onions.
    I will use the traditional type eggplant that’s available at our Woolies supermarket 😉

    Nice recipe. I will definitely try it. I love eggplants, but I usually sauté eggplants ( caramelization is important to the taste in Middle Eastern recipes). You introduced the new twist of steaming it. It makes it healthier.
