Salaam Behtey. I follow you very closely and love your recipes and food science explanations. Bravo MashaAllah! As a neuroscientist I am VERY concerned about the HEAVY use of MSG. Our glutamate intake via veggies etc is insignificant compared to the dose of MSG used in restaurant cooking. BUT that’s not the only issue. Glutamate is a neurotransmitter and thus, interacts with glutamate receptors. I believe that we should minimize exposure because some people are very sensitive to this excessive glutamate. Yes, the US FDA has classified MSG as GRAS (generally recognized as safe) but they also require labeling on products containing MSG due to the sensitivity of some and we clearly need to do more research. It is possible that Ajinomoto Indonesia uses Halal ingredients, but the bulk comes from China where Halal Authenticity remains questionable. Secondly, MSG is proven carcinogen (cancer causing agent) when cooked at high temperatures. This is the reason this product is banned in large number of non-muslim countries as well.
