I hate mayo. But I really hate mustard.

LOVE chicken salad – so many variations! Watching your video got me thinking about a Chinese "master stock" or Lo Shui – because you said you were going to freeze the stock because you just made it better! Well this is the same concept of a master stock. Some families claim they've been using their lo Shui for centuries! Would you consider doing a video on developing and maintaining a master stock?

That looks delicious. I make a very similar mayo base. One whole egg, 250ml of olive oil, one tea spoon of of dijon mustard, one tea spoon of lemon juice, a pinch of salt. Whisk it all together with a stick blender (I use a Bamix).

The only thing strange here for me is sour cream. But never say never. I could see how that would thicken things up in a nice way.

When I order a quick meal and get a rotisserie chicken from Costco and use the breast meat I get the chicken and make a chicken salad sandwich from that and comes out pretty good. I like using raisins and celery and apples and also onion.
I grew up with real homemade mayo which is white because only egg yolks are used. Love dill on anything but no fennel…I think you have to grow up with that and even then, you don’t have to like it. My husband wouldn’t touch a chicken salad with dried fruit. I think bell peppers would make it more appealing. As chef says, you can make it your own.
