    LOVE chicken salad – so many variations! Watching your video got me thinking about a Chinese "master stock" or Lo Shui – because you said you were going to freeze the stock because you just made it better! Well this is the same concept of a master stock. Some families claim they've been using their lo Shui for centuries! Would you consider doing a video on developing and maintaining a master stock?

    Looks great and delicicious but be realistic.
    Far too much filling to be eaten without squeezing out the other side and plopping into your plate, lap or shoes.

    That looks delicious. I make a very similar mayo base. One whole egg, 250ml of olive oil, one tea spoon of of dijon mustard, one tea spoon of lemon juice, a pinch of salt. Whisk it all together with a stick blender (I use a Bamix).

    I grew up with real homemade mayo which is white because only egg yolks are used. Love dill on anything but no fennel…I think you have to grow up with that and even then, you don’t have to like it. My husband wouldn’t touch a chicken salad with dried fruit. I think bell peppers would make it more appealing. As chef says, you can make it your own.
