    2. Its the heat of the pan that makes the alcohol evaporate, not the match. Isn't the flame just for show table side in a restaurant? You could just add the bourbon to the hot pan and wait the same total time and the alcohol would be gone, just the same. No?

    At christmas we always have risalamande (a vanilla rice pudding with chopped almonds & whipped cream) served with a warm cherry sauce, it's my favourite dessert. So I'm definitely going to try it out using this recipe for the sauce! šŸ‘€

    Hey, thanks for the delicious recipe and interesting concept. I was wondering why you opted against the following order:
    caramelize the sugar,
    glaze the cherries with this caramel,
    framble everything
    and then pour the juices
    to boil them down to the sauce.

    Would be very happy to hear your thoughts!

    I make about 5 – 7 jars of sour cherries in syrup every summer when they are in season and then enjoy them for the rest of the year. They are amazing in muffins, brownies or on top of pancakes, waffles, ice cream. I also sneak sour cherries in apple pies for color and that amazing pop of flavour šŸ„°šŸ’

    I love making anything that I can flambƩ. I made Cherries Jublilee for a Christmas dinner party a few years ago. I wish I had, had this calming video as a reference. I was never sure my choice of sour cherries was right at the time. Now I can make it again with confidence.

    I dream all year of my annual trip to Love Apple Farm in Ghent, NY, to pick sour cherries. Sadly this year the crop was lost due to that damned 26 degree night in late May. One of my favorite desserts is Bill Smith Atlantic pie.. lemony perfection!!!
