    Made some cheddar and fresno chile biscuits:

    Mix in a bowl:
    – 1 1/2c a/p flour
    – 1/2c cake flour
    – 2tsp baking powder
    – 1/4tsp baking soda
    – 1 tsp salt until mealy,

    Grate on a large-holes box grater:

    – 4oz (1 stick) butter
    – 4oz cheddar cheese

    Add the butter and cheese to the flour mixture and cut it in with a pastry cutter or your fingertips until mealy. Add 3/4 cup buttermilk and a minced fresno or jalapeño chile and fold it in with a rubber spatula.

    Turn the dough out onto a floured board and knead very briefly just until it comes together. Press into a 1-inch thick rectangle then cut into individual biscuits. Place on a parchment-lined baking sheet, brush with melted butter, and bake at 425F until golden brown, about 15 minutes.
