    Dinner for me tonight is whole wheat penne, with a 12 ounce pack of peas and carrots, lentils, dressed with an avocado, a shredded onion, mustard, raw frozen kale, lime juice, and a shredded celery stalk. That's about 4 dollars for a HUGE dinner, an entire day's calories, actually!

    Even though I've heard of the rampant inflation, I haven't really seen the effects of it personally. I suppose those who take part in the consumerist culture of excess feel the burn more than we true minimalists do.

    That second soup is my jam. I can’t wait to try that. The first soup look like it is a great base for any cream soup. I think I will add a bit of potatoes and maybe and/or broccoli . Thanks for the inspiration. I make beans in the instant pot also to save money. 30 mins and I have three times the beans that I get in the can. I love canned beans for convenience. But if I’m broke. I use dry and then a lot of times freeze one to two bags or use them later in other recipes during the week.

    Love these kind of videos that you make 🥰 so helpful. I thought when you were boiling carrots that you were going to make it into a sauce for your pasta…gave me and idea to do that and add it with a bit of nutritional yeast.
    If I want out of season produce I will buy it frozen. Broccoli here where I am is $10 per kg as we head into summer. I can usually get it frozen for around $5 if I really need it. But like you I go by the seasons, grow some of my own veg like zuchinnis, sweet potatoes, kale and beans so there's always something that I can use. Have a great week. Thanks for posting up video 💞

    What I also do with some of my vegetables mostly is when I go to my little produce market they have a secondhand table where they’re a little bruise and dinged up so I buy them chop them maybe even slightly sauté maybe not always throw them in the freezer you’re good to go.

    I love these ideas! I am a soup person year round too (especially split pea) … and a pasta salad year round person as well. It's 81F in Austin today, so pasta salad sounds great to me.

    As far as grocery savings tips to add, I think it's always good to look for grocery store specific tips for regional stores. I mostly shop at HEB here in Austin, and I do end up using Fetch as well as Ibotta (which I agree is mostly processed foods, but I got some rebates on medjool dates today for example). I also use HEB digital coupons, which offer amazing things like $4 off $4 for produce sometimes. I'm not an extreme couponer, but I do find some produce / WFPB deals from time to time.

    I have a question about salads, have you done a warm potato salad? or any others as this gave me the idea when you said you can eat the pasta salad warm. Loving your recipes and ideas, we still use oils but I am going to try some of your ideas for oil free> We love roasted veggies in olive oil from the oven nice a crispy.     Excellent video and tips Miranda. I have a tip for those in the UK that in Tesco and some other retailers look for yellow stickers or whatever colour it may be which means the price has been reduced usually because it's got a best before date or use by date that's either that day or a few days away.     I love soups all year long so thanks for the wonderful ideas. When something is on a great sale but a couple of extras if you can do you don't pay full price when you need them again… That's what I do.

    Great meals and tips. When I buy seasonal produce I keep an eye on it and if I can’t use it up before it will rot – I freeze it. Which is prefect for smoothies (frozen banana, berries – even watermelon and spinach!) I’ve made sauce from frozen tomatoes from my garden. I also freeze veggies for cooking: zucchini, peppers, onions, etc. 😁
