    I use Pomona's pectin for all my jellies and jeans because it isn't dependent on the sugar to set…. You can essentially use as much sugar as you want, or honey, or stevia… Whatever. It's wonderful!

    I have been avoiding making this recipe, Not because it doesn't look good but because it looks too good! Carrot cake is my favorite type of cake and I'm sure I will consume An obscene amount of this jelly.

    Suregel does make a low sugar pectin and everytime I have used it I have no problems with setting and everything has always tasted amazing.

    Loved this video and as if I need more jam on my shelf – I now need to make this. It just looks amazing. No, it isn't keto (I don't do keto) but I kinda feel like having this on a slice of bread is better than having the actual carrot cake (carb wise).

    You are so cute, Anna! This is my favorite jam. I have made it a couple of times. But would love to be able to make a lower sugar recipe, if possible. I do use Pamona’s pectin for most of my jams because it allows you to use sugar substitutes, monk fruit…. But I was told to use regular sugar on this jam. IDK why???

    Morning anna. I got that recipe of the ball canning book. I wanted more carrot taste personally. And WAY LESS sugar. So I am going to keep looking for a similar recipe. Thanks for all the neat videos. Really liked and saved the sourdough series . Be well

    In Canada we can buy Bernardin low or no sugar pectin. I have used Monk Fruit sweetener with it for many different jams and jellies with excellent results. They also give directions for low sugar jams that use very little sugar. I can only find it at Canadian Tire here. I do believe Ball makes a low sugar pectin the same.

    I just made this with no sugar needed pectin adding Splenda as my sweetener to taste . It turned out great not as Shiney but that is OK to me. There are so few sugar free jams available I love making different types for my husband and daughter in law to have.
