One thing, my kids and my grandchildren really like, I peel the bananas, cut them in half and add a popsicle stick in the end of them and freeze them after they froze for a few hours I heat up peanut butter with a little bit of honey in it some of them I dip in the peanut butter and refreeze them some of them I donโ€™t. After those of frozen again I take them out and dip them in melted chocolate. Some of them I sprinkle with a little bit of hazelnut some of them. I donโ€™t some of that peanut butter on them some just chocolate. And freeze them up all separate when theyโ€™re getting frozen and wrap a little saran wrap around them and put them in Ziploc bags. They make a wonderful treat during the summer. And if I have a lot of bananas, I freeze them the same way, but if they have a little bit of brown on them or not, and I freeze them in vacuum seal bags depending on how big they are maybe 4 to 6 bananas in each and use them later on to bake with.

Hey Jara, Could you freeze dry the mashed banana ? I was thinking that if you did the lemon / mashing bit using a potato masher tool thingy, then put it into an icing bag and squirted lines of mash and then dried it, you would have banana straws, ideal for snacking ๐Ÿ™‚ Not too sure if it would still go black like the frozen ones ? ๐ŸŒ๐ŸŒ

Thank you for mentioning that you ordered the 1 1/2pint- jars from your hardware store! I just checked and my local Ace Hardware has them! But WOW, have they gone up in price ($17.99)! I have one case but will go and get another one (or two). They are great for canning soups and stews. I had read a while back that Ball had stopped making that size. Glad to see they brought them back.

This is awesome! I don't eat a lot of bananas but do like to make a loaf of banana bread every once in a while. This seems like the perfect solution! I agree that Strawberry Banana Jam should be sold. Strawberry Banana Jell-O is one of my favorite flavors. Thank you so much for sharing your recipes, ๐ŸŒ

๐ŸŒ๐ŸŒ I have never canned any thing with banana before but will most definitely be doing the strawberry banana jam and the plain banana jam. I'm not so sure on the mashed bananas tho. How about blueberry banana jam ๐Ÿค” I'm going to have to look in to that.

I havenโ€™t water bathed tomatoes/fruit in 22 years but you have inspired me to dig out my enamel canning pot and try some banana-strawberry jam and mashed bananas. They will make a nice addition to my pantry. Thank you ๐ŸŒ๐ŸŒ

I'm a banana lover and that's a great score! I would love to come across a big box of "bad" bananas. Do you ask the store if they have any? Yummmm, pineapple banana bread, I'll have to make that! ๐ŸŒ
