    Butter mochi is Filipino. It’s Ilocano style bibingka, also called royal bibingka. Since Ilocanos are the majority of Filipinos in Hawaii, all the way back from the plantation era, locals have adopted this as a favorite dessert.

    I just made this and added a little cinnamon and nutmeg as well. Just like you, I didn’t wait long enough to cut into it, but it was sooo amazing. My mom grated some fresh coconut for it and it made it so good. Definitely gonna make this again. Very easy and delicious

    So I made this recipe twice and it was delicious. The Hawaiians who ate it liked it a lot. The only thing is that it dried out too much so I reduced the baking time in the second batch to 45mins, and it still is a little crunchy in the corners. Next time I’ll also reduce the heat from 375° to 350°.

    I tried your recipe last night and the whole family loved it! I made two batches, one with coconut and one with matcha powder. Both were fabulous! The matcha is just bitter enough that I did increase the sugar to three cups for just that batch and it turned out great. I would highly recommend if you're looking for alternative flavors to the coconut. Thank you so much for sharing this recipe!
