I got hatch chili chicken enchiladas from Sam's. Made lime cilantro rice and refried beans.
Oaxaca cheese goes really well in the enchiladas
Those cheeses are pronounced wa-ha-ka and co-tee-ha

the corn flakes make a great coating for oven fried chicken (use an egg wash to double bread them). I use them often and the crunch is amazing.
If you fry the corn tortillas just a lil bit to soften them up they won’t break.

Hi Mama B.!!! Everything you made looks delish. Look up on Google how to remove that white vein from the Chicken Tenders. I cannot stand that in my tenders. I always cut it out until I saw how to do it with a fork. Maybe you don't mind it in then tho. Anyways Spanish/Mexi is my second favorite kinds of food. I'll be making your recipes for sure. Looks delicious🎉 😋 Gotta have baked beans for that next feast you mentioned, I do a scratch made big batch in my Instapot with a leftover ham bone and then freeze it in portions for the summer, but even a doctored up can of Bush's is awesome 😁
When I would make Mexican food at home something was always missing. Cummin really is really a game changer.

I learned the hard way not to add garlic or onion powder to the spices I am toasting….They burn baby,burn.
Also, anything w cilantro in it is on my list to devour. It used to taste like soap to me, but now it's delicious. Street tacos for the win!
