    Before I had watched this episode, I decided to cook some lentils to have with some leftover rice. I made some cabbage slaw/salad to go with it. Then when the lentils were done, I dumped the rice into them, and put the slaw/salad on top. That was really good. Iv'e just started my whole food plant based journey. Not really sure if the instant pot would be beneficial for just me. What do you think? If yes, then what size pot do I need. Thanks for any suggestions you may have.

    I love my Instant Pot! You should try a Southwest Lentil Chili.. It's super yummy.
    I use
    2 Cups of Brown Lentils
    4 Cups of vegetable stock or Water
    1 26.5 oz Can of Bush's black beans
    2 14.5 oz Cans of Petite diced Tomatoes
    1 16 oz bag of Frozen corn
    1 Yellow onion
    1 can of Tomato paste
    2 tbsp of Chili powder
    1/2 tbsp of Cumin
    Garlic Salt
    Salt and Pepper to Taste.

    Hey…greetings from Germany. I LOVE your videos and I own an instant pot sins November last year and I'm totaly in love with it. Unfortunately my son and husband hate beans. I like them. So often I cook a big amount and store it in the fridge so I have them everytime I'm hungy.

    Jill-I went to my local H-E-B this evening, bought the ingredients, and made this. It is every bit as good as it looks in your video. It never occurred to me that I could use the saute function to cook with, though I've browned with it many times. Thanks so much, and best wishes from the Houston area!
