Hey Malcolm. I just found your channel a couple of weeks ago. Love your videos. I've learned a lot! I have 2 questions though on this one: 1) do you cook the flat to the same temp (210-212)? 2) Is butcher paper better than foil to wrap the flat or does it matter? Thanks.

Dude I have a brisket on my smoker right now. It’s been going for 9 hours. I may just have to do this with the point. But right now I’m soooooo hungry. Lol.
For the point/burnt ends…does it need to rest before cutting? seems like it went from the cooker to cutting but maybe because the last step is sitting in juices/sauce carmelizing it doesnt matter

Isn't it proven that eating burnt meet, particularly fatty red meat, causes cancer ?
Super video and Blue Ribbon for sure . . . But alas I can get pretty decent Q in town with zero mess or time. 7 hours in the pit and 2 more prep time just aint worth it.
Watching your video while smoking my brisket to make sure I didn't miss anything. A fly jumped my screen when you showed the brisket off grill it looked so good you tricked the fly.
