    Hey Malcolm. I just found your channel a couple of weeks ago. Love your videos. I've learned a lot! I have 2 questions though on this one: 1) do you cook the flat to the same temp (210-212)? 2) Is butcher paper better than foil to wrap the flat or does it matter? Thanks.

My wife just killed the burnt ends and the point has just about evaporated I was told do not change anything- She goes to all the BBQ pits around my place in TEXAS so I am riding on cloud nine right now– Y'all have a GREAT WEEKEND !! —-

    For the point/burnt ends…does it need to rest before cutting? seems like it went from the cooker to cutting but maybe because the last step is sitting in juices/sauce carmelizing it doesnt matter

    Super video and Blue Ribbon for sure . . . But alas I can get pretty decent Q in town with zero mess or time. 7 hours in the pit and 2 more prep time just aint worth it.
