    So. I cooked something very similar to this.

    Tomato purée, onion, carrot celery garlic, Thyme, chicken stock and a bit of Paprika.

    The beef of perfect, what is struggled with was the sauce, after reducing I found it to be tart.

    I removed the carrot & celery but I blended the onions and garlic into the sauce. Is that where the tart came from?
